Time to let people who enjoy their food with a bit of extra spice into a secret. It can be summed up in just four words, ghost pepper wing sauce. It is what food has been crying out for, yet so many people are unaware of it's existence.

As you would imagine from the name this wing sauce is based on the ghost pepper. At one time this was recorded as the hottest, naturally grown pepper. It has its origins in the Indian states of Assam, Nagaland and Manipur, but it is now grown and cultivated in many other locations.

Depending upon the original growing region this chili goes by various different names. If you view a map of India, locate the Brahmaputra river. To the North of here these chilies are known as Bhut Jolokia. To the South they become known as Naga Jolokia. In each region the word Jolokia just refers to the Capsicum chili pepper. Whereas Bhut is the Assamese word for Ghost.

The Southern version, the Naga Jolokia, pays homage to the Naga warrior tribe. These fighters were legendary for their ferocity in battle. Many feel that this is a fitting link to this chili with its fiery traits.

When discussing the heat of chilies many wonder about how such things are measured against other types. To enable each variety to be measured on the same scale something known as the Scoville scale was developed. It was named after it's founder, Wilbur Scoville. Way back in the early 1910's it relied upon a panel of five judges. They would undertake actual taste tests, involving sugar water and elements of the chilies. The element which gives the heat to chilies is known as capsaicin. Despite not being ideal it did produce consistent results in those early days.

It may surprise people when they find out that after salt, chilies are one of the most commonly used food additives. Just take a look at the number of varieties of things such as salsa the next time you are in a grocery store, and then consider how often salsa is used as a condiment. Even other countries often include the use of chilies in their recipes.

Many are now claiming that some of these hotter chilies also have certain medicinal benefits. Once again it all seems to involve this capsaicin, or the element that gives chilies their heat. Medical trials have been conducted with various levels of success, and quite a few surprising results.

It is not always possible to claim that your favourite sauce could also be helping to keep you healthy. Many people indicate that the unique smell and taste of these chilies already give a couple of their senses a robust workout. However you choose to use this sauce, one thing that you can be sure of is that it is not some average condiment.

With ghost pepper wing sauce, your wings will be a taste sensation each and every time. A recommendation is to keep this versatile sauce somewhere convenient in your kitchen. Even the blandest of meals can become a mouth watering feast just by using this condiment.
